Diabetic Carrot Cake Recipe
Carrot is a wonderful ingredient to use when you want to bake a healthy cake. You will need to shred the carrots first before mixing it with the rest of the ingredients. The following diabetic carrot cake recipe will teach you how to make this healthy yet delicious cake.
Ingredients:
- 1 1/2 cup all purpose flour
- 1/4 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 cup golden raisins
- 1/4 cup unsweetened pineapple juice concentrate
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 6 tablespoons sugar
- 1/2 cup unsweetened crushed pineapple, drained
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup shredded carrots
Instructions:
1. In a mixing bowl, sift in the all purpose flour, whole wheat flour and baking soda. Add in the ground cinnamon, ground ginger and salt. Toss it well.
2. In another bowl, add in the eggs, pineapple juice, sugar, oil and vanilla. Stir it slightly then pour this mixture into the mixing bowl earlier. Stir everything well until the mixture is smooth.
3. Now, stir in the pineapple, raisins and shredded carrots.
4. Grease a loaf pan and pour the mixture into it.
5. Bake for 40 minutes then let it cool in pan on the rack for at least 1 hour before slicing it.
6. Serve and enjoy.
