Diabetic Chocolate Cake Recipe
Who says you can't eat chocolate cake if you have diabetes. As long as you don't use too much sugar while making your cake, you should be fine. The following diabetic chocolate cake recipe uses cocoa instead of chocolate and some cold coffee.
Ingredients:
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup cold coffee
- 1 tablespoon oil
- 3/4 cup flour
- 1 tablespoon sweetener
- 3 tablespoons cocoa
- 1 egg, beaten
- 3/4 cup cold water
- 1 teaspoon vanilla
Instructions:
1. First of all, in a bowl, sift in the flour, baking powder and baking soda.
2. Next, in a mixing bowl add in the cocoa, egg, sweetener, oil, cold coffee, water and vanilla. Combine and blend well.
3. Gradually add in the sifted flour mixture earlier into the bowl and start mixing. Stop adding anymore flour if the cocoa mixture is already smooth.
4. Grease a square pan and pour the mixture into it.
5. Cover the pain with foil then bake at 350°F (177°C) for 25 minutes.
6. Remove the pan from the oven and let it cool on the rack before serving.
7. Enjoy.
