Diabetic Date Nut Cake Recipe

If you have never baked a diabetic date nut cake before, you should because it is very healthy and easy to make. For the following diabetic date nut cake recipe, you will need to have at least one cup of dates and a cup of pecans.





Ingredients:


  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 cup margarine
  • 1 cup chopped dates
  • 1 tablespoon liquid sweetener
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/2 teaspoon vanilla
  • 1 cup chopped pecans

Instructions:


1. In a large mixing bowl, add in the eggs, sweetener, vanilla and margarine. Combine and blend well.


2. In another mixing bowl, sift in the flour, soda and spices.


3. Add the flour mixture into the first mixture.


4. After that, add in the nuts, applesauce and dates.


5. Spray a 9 x 9 tube pan and pour the batter into it.


6. Bake it for 25 minutes for 350°F (176 °C).


7. Serve and enjoy!
