Diabetic Fresh Apple Cake Recipe

Apples are one of the most popular fruits for making diabetic cake. For the best result, you want to avoid using canned apples and use fresh apples if possible. The following diabetic fresh apple cake recipe also uses some raisins and rolled oats.





Ingredients:


  • 1 cup flour
  • 3/4 teaspoon baking soda
  • 2 cups apple, diced
  • 1/2 cup raisins
  • 1 egg
  • 1/3 cup margarine
  • 1 cup uncooked rolled oats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon vanilla
  • 1/4 cup equal sweetener
  • 1/2 cup nuts, chopped
  • 2/3 cup frozen apple juice concentrate, thawed and undiluted
  • dash salt

Instructions:


1. In a large mixing bowl, add in the flour, salt, oats, nutmeg, cinnamon, baking soda and cloves. Combine and mix well.


2. Set the mixture aside and cream the margarine now.


3. Add in the egg, apple juice concentrate and vanilla.


4. Now, stir in the flour mixture ealier and blend everything well.


5. Add in the apples, raisins, and nuts.


6. Now, prepare the baking dish (8"x12") by spraying it with Pam.


7. Add in the batter and spread it evenly then bake it for 30 minutes for 350°F (176 °C).
