Diabetic Pound Cake Recipe

Baking a diabetic pound cake is really easy. For the best result, be sure to measure your ingredients before mixing them together. Since the following diabetic pound cake recipe uses bananas, you want to make sure that you get them fresh.





Ingredients:


  • 2 cups flour
  • 2 eggs
  • 3 large ripe bananas
  • 4 tablespoons buttermilk
  • 1 cup raisins
  • 1/2 cup corn oil
  • 1 teaspoon vanilla
  • 1 teaspoon soda
  • 1 1/2 tablespoons liquid sugar substitute
  • 1 1/2 cups pecans or mixed nuts

Instructions:


1. In a large mixing bowl, sift in the flour and soda.


2. Add in the oil, sugar substitute and milk. Combine and mix well.


3. In another bowl, beat the eggs and add it to the rest of the ingredients.


4. Continue beating and everything is well mixed.


5. Pour the batter into a tube pan which is well greased and floured.


6. Bake it for 90 minutes at 350°F (176 °C).
